This custom combination consists of 60% chuck, 20% brisket and 20% ribeye cuts. The chuck, or shoulder, is a popular source for burgers. Remember seeing “ground chuck” at the store? It’s known for robust beefiness and good marbling. The brisket adds more marbling, a unique flavor element and hearty texture. The ribeye is full of rich marbling and amazing flavor.
The lean and fat percentages are 75% (lean) and 25% (fat). Put them all together and you’ve got a savory gourmet patty to headline at your next burger night.
